Crispy Bacon-Wrapped Potato Bites

 


Ingredients:


15 baby potatoes (or small Yukon Gold potatoes)

15 slices of bacon (halved crosswise)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika (optional)

1 teaspoon salt

1/2 teaspoon black pepper

Toothpicks (to secure the bacon)


Instructions:

Preheat the Oven:

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it.

Prepare the Potatoes:

Wash the baby potatoes thoroughly and pat them dry.

In a large bowl, toss the potatoes with olive oil, garlic powder, smoked paprika, salt, and black pepper to coat evenly.

Wrap with Bacon:

Take a half slice of bacon and wrap it tightly around each potato.

Secure the bacon with a toothpick if necessary.

Bake:

Place the wrapped potatoes on the prepared baking sheet, seam side down.

Bake for 35-40 minutes, turning halfway through, until the bacon is crispy and the potatoes are tender when pierced with a fork.

Serve:

Remove from the oven and let cool slightly before serving.

Serve with your favorite dipping sauces, like ranch, sour cream, or barbecue sauce.
